Baby Shower Cupcakes
400gr melted butter
4 ¾ sugar
Zest of two lemons
8 slightly whipped eggs
6½ dl flour

For the frosting:
6dl powdered sugar
6-8 tsp hot water
red or blue food coloring
24 sugar-coated almonds
Set your oven on 180°C. Prepare 24 cupcake papers. Mix the butter, sugar and the lemon zest in a big bowl. Add the egg mixture, a little at a time. Add the flour and mix very well. Divide the mixture into to cupcake papers. Bake for 20-25 minutes or until they are golden brown. When out, let them cool for some minutes. For the frosting: Put the powdered sugar in a bowl and add the warm water. Stir until the mixture is smooth and thick. Add the food coloring, a little at a time while mixing it. When you get pink or light blue color you are ready to go. Use a spoon to apply the frosting on each cake. Finish with a sugar-coated almond on each cupcake and leave it to rest for at least 30 half an hour before serving.
