Christmas is coming soon again and it is perfect time for you to do your research and find the best recipes and decorations for the holy night. I decided to share with you my favorite Ginger Bread Cupcake Recipe which is tested and will satisfy everyone craving for some sweets!

 Soft gingerbread cupcakes recipe,

What you need (for app.16 cakes)

115 gr flour
2 teaspoons ground ginger
3/4 teaspoons ground cinnamon
2 spoons gigner jam
3/4 tsp bicarbonate
4 spoons milk
6 spoons butter (room temp.)
70gr brown sugar
2 spoons malt syrup
2 eggs (lightly beaten)
candied ginger for  decoration

Set your oven on 160 C and prepare 16 cupcake papers. (to make sure the shape will be nice you can also double the papers) Mix the flour , ground ginger and ground cinnamon in a bowl. Add the gigner jam. Dissolve the bicarbonate in the milk in a separate cup. Mix the butter and the sugar fluffy in another bowl + add the syrup and egg ( a little at a time mixing in between) Add this mixture to the flour mix. Last, add the milk mixture (a little at a time while mixing) Separate the mixture in the cupcake papers and bake for 20 minutes or until the cupcakes rise and become golden brown.

For the frosting :
6 spoons butter (room tepm.)
175 gr powdered sugar
2 spoons syrup from the jar with ginger

Stir the butter fluffy in a bowl. Add the powdered sugar and  and the syrup and mix to a fluffy cream. Spread  the cream on the cooled cupcakes and decorate with small pieces of ginger jam.
